Rich Chocolate Mousse

  • 40g Chocolate broken into pieces (90-100% Dark, I use Lindt or Montezuma).

  • 80ml Unsweetened almond milk

  • 4 tsp (6g) Granulated stevia

  • 10g Coconut oil

  • 2 heaped tsp Inulin (optional)

  • 100g Avocado roughly diced.

  1. On a very low heat place the following ingredients in a saucepan to melt: chocolate, almond milk, stevia and coconut oil. Stir consistently so nothing sticks to the bottom.

  2. With a hand blender or a Nutribullet blend the chocolate mixture plus the avocado and inulin until smooth and creamy.

  3. Using a spatula scrape the sides down and pour your mousse into a bowl or container, then place in the fridge to set.

  4. After 30-40 minutes your mousse is ready. Serve with raspberries, strawberries a splash of cream or even shave some extra dark chocolate on top for decoration!
