Rich Chocolate Mousse
40g Chocolate broken into pieces (90-100% Dark, I use Lindt or Montezuma).
80ml Unsweetened almond milk
4 tsp (6g) Granulated stevia
10g Coconut oil
2 heaped tsp Inulin (optional)
100g Avocado roughly diced.
On a very low heat place the following ingredients in a saucepan to melt: chocolate, almond milk, stevia and coconut oil. Stir consistently so nothing sticks to the bottom.
With a hand blender or a Nutribullet blend the chocolate mixture plus the avocado and inulin until smooth and creamy.
Using a spatula scrape the sides down and pour your mousse into a bowl or container, then place in the fridge to set.
After 30-40 minutes your mousse is ready. Serve with raspberries, strawberries a splash of cream or even shave some extra dark chocolate on top for decoration!
