Pea & Spinach Soup

Serves 4
500g frozen peas,
2 Tbs olive oil,
400g frozen spinach,
1 can of black eye beans,
1 large onion (chopped),
2 large garlic cloves (finely diced),
400ml coconut milk,
300ml of almond milk,
4 Tbs nutritional yeast,
3/4 tsp Smoked paprika,
1/4 tsp nutmeg,
Salt and pepper (generous)
1. In a large pan on a medium heat add the olive oil and sautée the garlic and onion for 7-10 minutes.
2. Add the remaining ingredients and bring to a boil, then reduce to a simmer and leave for 12-15 minutes.
3. Blitz everything in a blender until smooth and creamy, add a splash more olive oil for an extra velvety finish!
4. Serve and enjoy with your friends or family.
